If you enjoy unique cocktail flavors or working with fresh herbs and spices you can make a lot of unique bitters such as coffee, celery and spice, key lime, or apple pie. You'll basically infuse raw ingredients into a liquid extract and then mix several singular extracts into liquid bitters blends.
Culinary weblog Adventures in Cooking recommends making a basic extraction by adding spices and herbs in a small mason jar with vodka. Depending on the spice, bark, or root it may take anywhere from 7-28 days for a full extraction.
